INTRODUCTION

Native American Indians regard every meal as an act of remembrance and spiritual awareness.  The earth and all animal and plant life are respected for their contribution to existence.  Food is often an important part of Iroquois ceremonies ... and a ceremony is never complete until a meal is eaten.
In the Northeast of America the Creator gave the Iroquois the "Three Sisters", corn, beans and squash to sustain life. These foods are a reminder that each day everything needed to survive is provided by the land.
A large portion of the vegetables in the world today were originally found and used by the indigenous people of the western hemisphere.  The recipes included in this volume have been abstracted from numerous sources, including antique cookbooks, handwritten notes, verbal memories and people who are preserving the ancient cooking methods.  Most recipes incorporate native ingredients but the formulas have been adapted for modern culinary conveniences.

DEER MEAT STEW

Fresh or frozen deer meat is suitable ... use one and one half pounds cut into one inch cubes. In a large kettle, combine the meat with three tablespoons flour and one teaspoon of salt coating the cubes well. Brown the meat in hot bacon drippings. Add one half cup of chopped leeks, one clove garlic minced, one half teaspoon thyme, three cups V-8 juice, two beef bouillon cubes, two medium potatoes diced, four to six carrots cut into chunks, three celery stalks cut into chunks and hot sauce to taste.
Add enough liquid to cover mixture, adding water or more juice if necessary. Simmer over fire for one and one half hours and stir often.
